The Bikini Cocktail
Yields 10 servings
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Combine every components inside a pot, heat until it reaches a gentle boil, stirring so the sugar melts. Next, take off the stove allowing it to reach room temperature fully. Decant into an sterilised bottle, close it and refrigerate it in the fridge, where it will keep for about a month.
Preparing the Cocktail Base: Pour the specified liquid ingredients into a large bottle, allow it to infuse for 60 minutes, then filter it best through muslin, so it's completely strained.
For serving: Measure 85ml of your batch mix to a cocktail shaker filled with ice, and stir carefully for one minute until cold. Pour into a frosted cocktail glass or equivalent, garnish with the cranberries and complete it using a brief mist of the essential oil over the drink.
